It’s a steak. It’s a DELCIOUS steak. Not to mention how limited it is to get due to the amount of it you get off a cow.
That’s a big reason I am happy it’s not a food trend. I don’t want to not be able to get one when I want one.
Carlitos Gardel does this steak perfectly. They cut it in house every day just to ensure they get these hard to get cuts.
It’s no wonder that that this small steakhouse has been called one of the top in California.
