Check Out the TODAY Show Food Club! #Sponsored

 I got the chance to share one of my family’s favorite recipe with the good folks at TODAY through their new TODAY Food Club (TFC). You can even be featured on, the TODAY show, or one of their other many social media channels.   Like many families, mac and cheese has been a favorite in my family for generations. It has been passed down from generation to generation. Living in So Cal, sometimes you want something a little faster to make and want to avoid using the oven. So this is my family’s mac and cheese oven required. This can be made quickly for those days where you need to eat in a rush.

  Serves 4 PREP TIME 5 Minutes  COOK TIME 30 Minutes

 1/2 cup of green chiles
2 cups of elbow macaroni
Two cups diced cooked chicken.
4 tablespoons butter
2 eggs
3/4 of a cup evaporated milk
3/4 of a cup sharp cheddar (use white to make it look fancy) shredded
 3/4 of a cup jack cheese
 Cilantro for garnish (optional)
DIRECTIONS In a large pot bring to a boil and add your pasta. Cook until al dente and drain. While the pasta is cooking shred your cheese, and gather your other ingredients.  Remove the pasta from the pot while mixing your other ingredients in when the pasta is done. Next go to the pasta pot and start adding your remaining ingredients. Add your butter, milk and cheese and let them cook a little over low heat before whisking in your eggs, chile, and diced chicken. Add your pasta slowly to avoid clumping to the sauce. Cook on low for 3  5 minutes to thicken your sauce and allow everything to harmonize. Take finished pasta and plate. Add cilantro for a garnish if you want.
