Knickerbocker Glory, A Chef's Guide to Innovation in the Kitchen is a interesting read. Like the title says its meant for restaurant professionals and people who want to enter the industry. The part for the common man would be the dessert section. Author Matthew Robinson goes over several of the desserts hes created called Knickerbocker Glory. These are desserts made with layered ice cream, cake, fruit etc. Some great pretty unique. If you are looking for a guide to a different dessert this may be a good book for you.
